How to Make Coffee Chia Pudding: A Healthy Breakfast or Anytime Snack

I’ve been eating chia seeds for years but it wasn’t until recently that I decided to give my chia pudding recipe an update by adding coffee.

Turns out, coffee chia pudding tastes great and the best part is that it is just so simple to make.

What are some benefits of eating chia seeds? 

Chia seeds come from the Salvia hispanica plant, which grows in parts of Central America and Mexico. They might be tiny, but they have huge health benefits:

In addition to health benefits, it’s also a convenient and healthy breakfast or snack option. You can make this in advance and leave it in the fridge for up to 5 days. That’s a whole work week worth of breakfast!

How do you eat chia seeds? 

Chia seeds are so versatile because they’re tasteless. You can sprinkle a bit on top of breakfast foods like oatmeal and smoothie bowls and it also works on salads and desserts.

Or soak it in liquid to give it a thick texture in the form of this coffee chia pudding. 

What You’ll Need to Make Coffee Chia Pudding

Ingredients 

Step by Step Instructions

Step 1 

Measure out all ingredients and pour into a mason jar. (Use a funnel for easy pouring.)

Step 2 

Stir the ingredients. 

Step 3 

Put the lid on the mason jar and place in the refrigerator overnight or for at least 6 hours. 

The chia seeds may clump to the bottom, so you may want to check on it and give it a stir. If you feel it’s too thick, add a little more liquid and put it back in the refrigerator for 15 minutes or so before eating.

Step 4

Take the coffee chia pudding out of the fridge, give it a stir and add toppings or eat it straight out of the jar. 

Tips for Making Coffee Chia Pudding

Mocha Chia Pudding

For a mocha version, add 2 tablespoons of cocoa powder and 1 tablespoons of maple syrup or sweetener of choice. This mocha chia pudding version is slightly thicker than the classic coffee chia pudding, so I like to add a little more liquid before consuming.

Materials

  • Mason jar
  • Cold brew coffee maker (we used a Primula Cold Brew Coffee Maker)

  • ½ cup cold brew coffee 
  • ½ cup oat milk (or milk of choice) 
  • ¼ cup chia seeds
  • 1 teaspoon honey or sweetener of choice (optional)
  • Various toppings – fruit, granola (optional)
