Coffee with eggs? Seriously, you would never think that egg and coffee were meant to be together. It may sound weird but have you heard about Vietnamese Egg Coffee? It is another invention that is popular in Vietnam especially in Hanoi. Interested to find out more? Keep reading! But please read this first before continuing:

Vietnamese Egg Coffee is made by whipping egg yolk until it is frothy and poured on top of a cup of strong brew dark coffee. The robust filtered coffee and velvety whipped egg cream contrast each other perfectly as the flavors hit your taste buds. It only needs these simple ingredients that are easily found in your kitchen.
- 2 tablespoons of ground coffee. You can use any type of coffee but I chose Café Du Monde ground coffee for its right grind and flavor
- 2 egg yolks
- 1 tablespoon of sweetened condensed milk
- 1 tablespoon of granulated sugar
- 8 oz of boiling water
Bring water to a rolling boil.
Add ground coffee to the filter.
Screw the top filter screen until snug, then loosen it a quarter turn. This is to prevent over tightening.
Set the filter on your coffee mug.
Pour in 2-3 tablespoons of hot water to moisten and swell the coffee.
Now fill the filter with hot water.
Adjust the drip by either loosening or tightening the top filter screen. Aim for 5 minutes of brewing time.
While coffee is dripping, let’s get the egg yolk out of the white.
Whisk the egg yolk at medium speed for about 30 seconds.
Add in sugar and continue to whisk at medium speed for 1 minute.
Add in sweetened condensed milk.
Whisk at high speed for 1 minute or until egg yolk is smooth and fluffy.
Remove the filter system when it has stopped dripping.
Pour the egg cream on top.
Voila! You just made yourself a cup of Vietnamese Egg Coffee.
