Superfood Smoothie: How to Make a Mushroom Coffee Smoothie

The benefits of drinking a smoothie in the morning are numerous. They’re so easy to make, fast to drink when you’re on the go and depending on what you put in yours, you’re getting a good serving of fruit or vegetables, plus vitamins and nutrients that these ingredients provide.

Now what about switching up your usual morning smoothie and adding in mushroom coffee?

Wait, mushroom?! Yes, mushroom coffee. 

Mushroom coffee contains functional mushrooms that provide a variety of health benefits. And apart from the health benefits, I would just drink it anyway because I found a combination of mushroom coffee with a coconut based superfood creamer that I just love the taste of.

I do recommend trying mushroom coffee first before making this smoothie to see if you like the taste. (I wouldn’t want you to make it if you find you don’t like the taste of it. It took me a few cups and also figuring out what kinds of creamers to put in to become a fan of this.)

What is mushroom coffee? 

Mushroom coffee is coffee mixed with functional mushrooms. There are thousands of mushroom species found around the world and some may have more or different nutrients, healing properties and medicinal benefits than others. 

Functional mushrooms are mushrooms that contain many of those benefits. A few of the common ones are chaga, lion’s mane and cordyceps, which are found in the mushroom coffee I used for this recipe from Laird Superfood.

What does mushroom coffee taste like? 

To answer the question probably going through your mind… no, mushroom coffee does not taste like mushrooms.

The coffee beans that are used in the mushroom coffee will also affect the taste. The Laird Superfood mushroom coffee which I used (dark roasted) in this recipe contains certified organic Peruvian coffee beans that are hand picked, slow roasted for a bold flavor profile and carefully dried to retain as much flavor as possible.

Benefits of Laird Superfood Creamer 

I paired mushroom coffee in this recipe with Laird Superfood’s Original Creamer. Their creamer not only makes the mushroom coffee taste great, but is also a superfood in itself.

How to Make a Mushroom Coffee Smoothie

Step 1

Brew two shots (2 ounces) of mushroom coffee.

If you don’t have an espresso machine, you can also use a moka pot (what I used) or Aeropress

Step 2

Add banana, oat milk, shots of mushroom coffee and creamer to a blender. I use a personal blender for the convenience of drinking it right out of the blender in the mornings.

Step 3

Blend and enjoy this mushroom coffee smoothie!

Materials

  • blender
  • 2 shots espresso (made with Laird Superfood Dark Roast Mushroom Coffee)
  • 1 banana
  • ½ cup oat milk (or milk alternative of choice)
  • 1 tablespoon Laird Superfood Original Creamer

Instructions
