How to Make Coffee Popsicles: A Dalgona Coffee Popsicle Recipe

Dalgona coffee needs no introduction. It really seems like everyone has been trying this latest coffee trend. But unlike other food trends which may require some cooking skills, dalgona coffee is foolproof and so easy to make. 

I taught you how to make dalgona coffee before, (check out how to make dalgona coffee here if you haven’t read or made it yet) and since making it, I’ve seen so many variations of dalgona coffee. Have you seen dalgona coffee made with strawberry powder, matcha, Milo and even a boozy version? 

I was inspired by this creativity, so I also took a shot at a variation. 

Introducing… the dalgona popsicle. 

I’m looking forward to treating myself to something refreshing to cool down with as the weather gets warmer, so I created this fun dalgona coffee popsicles recipe that you can try at home. It’s a simple recipe that is sure to delight your taste buds, using a minimal amount of ingredients which you may already have in your kitchen.

For those of you who are new to the idea of making popsicles at home, it is a lot easier than you may think. It’s actually a super easy process. It doesn’t require a specific technique. Just some good planning ahead to make time for chilling, patience and your creativity.

What You’ll Need to Make Dalgona Coffee Popsicles 

The Tools

The Ingredients (6 servings)

I used coconut milk, which adds a creamy texture to the popsicle with a subtle sweet flavor. 

Step by Step Instructions

Step 1

Combine instant coffee, brown sugar and water in a mixing bowl.

Step 2

Use a hand mixer and whip the entire mixture for about 2 minutes.

Step 3

Whip to a meringue-like, thick coffee mousse.

Step 4

Evenly distribute the mousse between the six wells of a popsicle mold.

Step 5

Top off each with coconut milk.

Step 6

Give them all a good stir.

Step 7

Once the molds are filled, place the sticks on top and freeze for at least 4 hours.

Step 8

To unmold, briefly dip the mold in warm water until the popsicle loosens, about 10-20 seconds.

These dalgona coffee popsicles are ready to keep you cool.

Don’t have a popsicle mold on hand right now? Don’t sweat it! Shot glasses, ice cube trays, yogurt containers and small paper cups work just as well. Your popsicles may just look a little different than a standard popsicle, but it’ll taste just as great.

Simply pour the mixed ingredients into your own mold, cover with a piece of aluminum foil, and poke a wooden popsicle stick through the foil. The aluminum foil will help the stick stay in place exactly at the center of the mold.

I’m a big fan of coffee and popsicles. So coffee popsicles are a great way to combine the two for a creamy, sweet and coffee flavored treat. If you are looking to create homemade popsicles that don’t require a whole lot of work, this recipe will definitely do the trick.

  • 2 ounces instant coffee
  • 2 ounces brown sugar
  • 2 ounces water
  • 5-6 ice cubes10 ounces coconut milk
