Thin Mints Coffee: Girl Scout Cookie Inspired

A chocolaty and minty coffee beverage inspired by the popular Girl Scout Cookie: Thin Mints!

There’s a time of year when you may notice green tables with boxes of cookies stacked outside your local grocery store or around the neighborhood. When you see the girls in their brown vests and their parents from your local Girl Scouts troop, you know it’s Girl Scout cookie season!

If you see the tables or get someone you know asks you to buy Girl Scout cookies, this is your chance to stock up on your favorites. 

Last Girl Scout cookie season, I created the Samoas Coffee made with the inspiration of the popular Samoas Girl Scout cookie. This year, it’s Thin Mints’ turn to shine. 

What are Thin Mints?

Thin Mints are described as crisp, chocolate cookies dipped in a delicious mint chocolaty coating. 

Sounds delicious? They’re also made without high-fuctose corn syup, partially hydrogenated oils, have zero grams of trans fat per serving, and are made with vegan ingredients. 

What month do Girl Scouts sell cookies?

Girl Scout cookies are typically sold between January and April, but it may depend on your area and the local Girl Scouts troop.

Can you buy Girl Scout cookies at the grocery store?

While you won’t be able to buy Girl Scout cookies within the aisles of grocery stores, you can typically find Girl Scouts and their parents at a table outside of a grocery store with cookies in stock. 

You may also encounter a Girl Scout cookie table outside of other retail locations or local businesses. Just use the cookie finder tool on the Girl Scouts website to help you locate them. 

It’s best to also ask around to support a Girl Scout you may know, but if not, you could also support your local Girl Scouts troop and get the cookies delivered conveniently to your door.

What is Thin Mints Coffee made of?

Thin Mints cookies combine the flavors of chocolate and mint. The Thin Mints Coffee we’ll make here will do the same. 

We’ll use a homemade mint syrup and combine it with coffee (using your coffee beans of choice!), chocolate syrup, and some milk. And as a bonus, you may want to top it with whipped cream, a drizzle of chocolate sauce, and of course, enjoy it with a few Thin Mints on the side.

Tips for Making Thin Mints Coffee

Mint Syrup  

Making your own mint syrup at home is easy. All you need is an equal amount of sugar and water and a handful of mint leaves. Place the sugar and water on the stovetop to combine. Then let the mint leaves steep. You can choose to make more than the ½ cup as listed on my mint syrup ingredients list if you want to have more for your morning cup throughout the week. 

If you don’t have time or don’t want to make the syrup yourself, you can also purchase one. There’s a Torani Peppermint flavored syrup.  

Coffee 

For the coffee, use your favorite coffee beans and coffee brewing method. This could be your regular drip coffee maker, moka pot, Keurig, or like what I used—a French press

As for the beans, I used illy Classico.

Chocolate Syrup

Use a chocolate syrup you can find in your local grocery store for drizzling on ice cream, like Hershey’s Chocolate Syrup. Or Torani chocolate syrup.

Milk

For the milk, you can use your preferred milk of choice, including dairy-free alternatives. I used almond milk. 

Toppings

Toppings are optional but you can make the Thin Mints Coffee an extra treat by adding whipped cream on top. And don’t forget to enjoy it with Thin Mints cookies. 

How to Make Thin Mint Coffee 

  1. Make mint syrup. Place sugar and water in a saucepan and heat over medium heat until the sugar dissolves. Turn off the heat and steep mint leaves. Set aside. 
  2. Brew coffee using your favorite brewing method.
  3. Combine coffee, mint syrup, chocolate sauce, and milk. Taste and feel free to add more chocolate or mint.
  4. Top with whipped cream and chocolate syrup. Enjoy with Thin Mints cookies.

Step 1

Make mint syrup by placing sugar and water in a saucepan. Heat over medium heat until the sugar dissolves. 

Turn off the heat and steep mint leaves. Set aside. When it cools, add to a mason jar to store.

Pick your preferred coffee brewing method and brew coffee.

Combine coffee, mint syrup, chocolate sauce, and milk.
