Sugar Free Pumpkin Cream Cold Brew

Annual fall drinks arrive back at Starbucks in late August. Some may think it’s too early, but hey, I’ve already started making my Sugar Free Pumpkin Cream Cold Brew at home.

The Starbucks Pumpkin Cream Cold Brew is a great transition drink. It’s cold so it keeps you cool during the still warm days of late summer. But it has a taste of fall. 

Because this is my morning go-to every day for the last days of summer (until I get bored of pumpkin and turn to something else), I prefer not drinking a ton of sugar in the morning. If I had a Pumpkin Cream Cold Brew from Starbucks every morning, that’d be 31 grams to be exact for a Grande! 

So this is what I make instead. My sugar free pumpkin cream cold brew. 

What is in Starbucks pumpkin cream cold foam?

The Starbucks Pumpkin Cream Cold Brew consists of ice, brewed coffee, pumpkin cream cold foam, vanilla syrup and pumpkin spice topping. The pumpkin cream cold foam is made with cream, milk, pumpkin spice sauce, and vanilla syrup. 

When you order the drink at Starbucks, you’re getting a coffee sweetened with vanilla syrup. Additionally, the cream has sugar too.

One of my favorite coffee beans for cold brew this summer has been Stumptown’s Holler Mountain (if you’re looking for a bean to try making cold brew with at home!) I enjoy the taste of the cold brew even more without any sugar or added syrups. Plus, in this recipe, I used almond milk. So it’s dairy-free as well.

Tips for Making Sugar Free Pumpkin Cream Cold Brew

Milk 

Starbucks uses cream and milk to make their pumpkin cold foam. 

To make cold foam at home, you have options. Starbucks is known to have a special machine and setting they use to get that perfect cold foam. 

I’ve tested multiple types of milk and various methods and have found that skim milk works best. However, if you want to go the dairy-free route, it’s possible too. I find almond millk tends to froth well in my Miroco milk frother. So feel free to experiment with milks and know that there is an option to make a dairy-free version of this as I did. 

Pumpkin Pie Spice 

You can find pumpkin pie spice in your local grocery store or online at Amazon

If you’re wondering what else you can do with it, this spice is used to make pumpkin pie (hence the name) and I also use it for my oatmeal in the mornings during the fall. 

Pumpkin

I used canned pumpkin from Libby’s. This tends to be available year round in my local grocery store. But during fall, it seems to appear more often in more aisles. Or maybe it’s because I’m looking for it, so it tends to show up more.

Cold Brew Coffee 

I make cold brew coffee at home on a weekly basis with my French press

Here’s my complete guide to making cold brew coffee at home. If you don’t have a French press, don’t worry. You don’t even need any coffee-related brewing equipment to make cold brew coffee. Using an empty pasta jar will work just as well. 

All you need is time. It takes 12-15 hours for the water to steep in your coarsely ground coffee beans, so keep this in mind when you want to make this recipe. 

Ice 

I used regular ice cubes (using my new silicon mini ice cube tray!) 

You can also use coffee ice cubes aka freezing coffee instead of water inside ice cube trays. This is great for the days when it’s really hot and your ice immediately melts. With coffee ice cubes, your cubes melt and you just get more coffee. No more diluted coffee. Problem solved. 

How to Make Sugar Free Pumpkin Cream Cold Brew

  1. Mix milk, pumpkin pie spice, and pumpkin by placing the ingredients in a mason jar and shaking vigorously until combined. 
  2. Pour this mixture into a milk frother. Turn on cold setting. 
  3. Pour cold brew coffee into a glass with ice. (Check out our guide to making cold brew coffee at home.) 
  4. Top with pumpkin cold foam.
