Super Simple Iced Pumpkin Spice Latte

So of course, we had to share the pumpkin spice latte recipe that we use each fall. 

This is my super simple iced pumpkin spice latte for the days that aren’t quite cold enough for a warm pumpkin spice latte, but still calls for those cozy pumpkin and spice flavors.

Pumpkin spice latte history 

The pumpkin spice latte is a Starbucks fall staple that was first introduced to the world in the fall of 2003. 

It was developed at the Starbucks headquarters in Seattle in their “lab” where they create new items for their menu. How exactly did they know that pumpkin and coffee would go together? They ate pumpkin pie while sipping espressos. 

Today, the pumpkin spice latte is more than just a drink. It has resulted in many Starbucks memes, has a nickname (PSL) and has inspired others to recreate their own versions. 

This includes our iced pumpkin spice latte, which we make with less sugar (but we’ve included options so you can add more sweetness if you desire) and not to mention how much money we save making it at home. 

Here’s how.

Iced Pumpkin Spice Latte Ingredients

Espresso

I used Illy Intenso coffee. I purchase it in whole beans and grind it with my Hario Skerton grinder before brewing it with a moka pot

While you need an espresso machine to truly make espresso, a moka pot will work just fine. If you have neither an espresso machine nor a moka pot, you can also make an espresso like concentrated coffee using a French press or Aeropress. 

And if you don’t have any of these tools but still want to make an iced pumpkin spice latte right now, just brew coffee as you would and try to make it as concentrated as possible. 

Milk

I used oat milk. 

You can use whole, skim or a milk alternative. 

Pumpkin puree 

I used an organic canned pumpkin puree

Pumpkin pie spice 

Use store bought pumpkin pie spice, or you can also make your own at home, as long as you have ground allspice, cloves, ginger, nutmeg and cinnamon in stock. 

Simply combine the following to make pumpkin pie spice:

Store this in a mason jar so you can use it again for more iced PSLs. 

Maple syrup

This is what will give the iced pumpkin spice latte a little sweetness. So if you prefer no sugar at all, omit this. Or if you feel that 2 teaspoons isn’t enough, add a little more after tasting it. 

In Starbucks’ recipe, they use a pumpkin spice sauce (which contains sugar) and vanilla syrup (which also contains sugar.) So you can also put in a teaspoon or two of vanilla syrup, if you feel that the maple syrup isn’t enough. 

Because I put Reddi Wip whipped cream on top of my iced pumpkin spice lattes, I feel that it’s already sweet enough when it starts to mix in with the coffee. 

Ice cubes

Use regular ice cubes or coffee ice cubes. I make my coffee ice cubes with cold brew coffee concentrate. This is the best ‘hack’ to avoid diluted coffee when making iced coffee. 

Topping

Like Starbucks, I top my iced pumpkin spice lattes with whipped cream and a few dashes of pumpkin spice. 

For the whipped cream, I used a store bought whipped cream. But sometimes I prefer making my own whipped cream by mixing heavy cream with an electric mixer until stiff peaks form. 

How to Make Iced Pumpkin Spice Latte

Step 1 

Brew espresso. Set aside to cool. 

I used a moka pot using Illy Intenso Whole Beans. 

Step 2  

Put milk, pumpkin puree, pumpkin pie spice and maple syrup in a blender. Blend until combined.

Step 3 

Put ice cubes into a glass. Pour cooled espresso and pumpkin milk over ice. 

Step 4

Top with whipped cream and sprinkle some more pumpkin pie spice on top. Super simple!

  • 2 shots espresso 
  • 1 cup milk 
  • 1 tablespoon pumpkin puree
  • ¼ teaspoon pumpkin pie spice
  • 2 teaspoons maple syrup (or more if desired)
  • 8-10 ice cubes
  • Whipped cream 

Instructions

1. Brew espresso. Set aside to cool. 

I used a moka pot using Illy Intenso Whole Beans. 

2. Put milk, pumpkin puree, pumpkin pie spice and maple syrup in a blender. Blend until combined.

3. Put ice cubes into a glass. Pour cooled espresso and pumpkin milk over ice. 

4. Top with whipped cream and sprinkle some more pumpkin pie spice on top. Super simple!
