Coffee Steak Marinade Recipe

Letting your steak soak in coffee will enhance the moisture and give you a tender, tasty, and flavorful meat.

Coffee isn’t just a morning beverage. Did you know you can use coffee for cooking just like wine? Coffee adds complex richness and depth while boosting flavor in many dishes. 

Most coffee varieties are acidic and are generally rated around a five on the pH scale. This acidity level is essential to note because it replicates tannins in wine. Both help tenderize the meat and create a depth of flavor when used as a marinade.

This easy-to-prepare recipe will please every guest on your list, and it especially goes well with some mashed potatoes and a glass of red wine

For best results, you can prepare and marinate the steak the night before you cook it. Just make sure to keep marinating it in the refrigerator.

How to Make Coffee Marinated Steak   

  1. Make the coffee marinade by combining dry ingredients (onion powder, garlic powder, brown sugar, paprika, and black pepper) in a bowl. Whisk wet ingredients with dry ingredients until combined. 
  2. Place steak in a large zipper bag and pour marinade. 
  3. Marinate for 4-5 hours in the refrigerator.
  4. Bring steak to room temperature for about 30 minutes. 
  5. Season steak with salt and pepper and pan-sear steak over medium-high heat. Cook to your desired doneness. 
  6. Cut against the grain and enjoy!

Step 1

Make the coffee marinade. 

Mix and combine all the dry ingredients (onion powder, garlic powder, brown sugar, paprika, and black pepper) in a bowl.

Step 2

Whisk the wet ingredients (coffee, Worcestershire sauce, Champagne vinegar, and coconut aminos) into the dry mixture until well combined.

Step 3 

Place the steak in a large zipper bag and pour the marinade in.

Let out as much air as you can and seal the bag.

Put the bag in the refrigerator immediately and let it marinate for 4-5 hours.

Bring steak to room temperature before cooking by letting it sit on the counter for 30 minutes.

Step 5 

Season both sides generously with sea salt and black pepper to your liking.

Step 6 

Preheat the pan to medium-high heat and pan-sear the steak with a half tablespoon of oil. Sear each side for 3-4 minutes and 1 minute on each edge.

Reduce heat to medium-low and add butter. Spoon butter over the steak and continue to cook until your desired doneness.

Step 7

Remove the seared steak from the pan and let it rest on a plate for 5 minutes.

Cut the steak against the grain into thick slices and serve!

  • 1 cup strong brewed coffee (room temperature)
  • 2 tbsp coconut aminos
  • 2 tbsp Worcestershire sauce
  • 2 tbsp Champagne vinegar

  • Butter
  • Cooking oil
