How to Make Coffee Ice Cream Sandwiches

We made a batch of our coffee chocolate chip cookies and a batch of our super simple no churn coffee ice cream, so naturally we had to put the two together.

Assembling coffee ice cream sandwiches is the easiest and tastiest treat we’re eating all summer long (and actually for any time of year too!)

How to Make Coffee Ice Cream Sandwiches

Step 1

Make coffee chocolate chip cookies and no churn coffee ice cream.

Step 2

Get your workspace ready. Chill cookies in fridge for 15 minutes. Lay out a piece of parchment paper.

Step 3

Place cookies on parchment paper. Add a scoop of ice cream between two cookies. Press cookies together.

Step 4

Add mini chocolate chips, sprinkles or topping of choice on to the edges. Eat immediately, or place in the freezer immediately.

  • Mini chocolate chips (or sprinkles/any additional toppings)

Instructions

1. Make coffee chocolate chip cookies and no churn coffee ice cream.

2. Get your workspace ready. Chill cookies in fridge for 15 minutes. Lay out a piece of parchment paper.

3. Place cookies on parchment paper. Add a scoop of ice cream between two cookies. Press cookies together.

4. Add mini chocolate chips, sprinkles or topping of choice on to the edges. Eat immediately, or place in the freezer immediately.

Notes

  • For more ‘perfect’ shaped ice cream centers, if using the coffee no churn ice cream recipe, store it in paper ice cream pint containers. When ice cream is ready, use a knife and cut through the container to form ice cream disks.
  • If you don’t have ice cream pints on hand, lay a piece of plastic wrap on a surface. Place scoop of ice cream on the plastic wrap, fold plastic wrap over and shape the ice cream into a disk as best as possible.
  • The above method can get messy. For me, the best way is to take the ice cream out of the freezer for a few minutes until the ice cream is soft enough that I can press it down easily without breaking the two cookies, but not too soft that the ice cream would melt and run out of the sandwich. After assembling the sandwich, I immediately put it into the freezer for the ice cream to harden again.
