Cinnamon Dolce Latte Recipe

Our Cinnamon Dolce Latte recipe is inspired by the delicious Starbucks drink enjoyed either hot or iced.

If you’re a fan of cinnamon flavored coffee, the Cinnamon Dolce Latte is a treat. 

The Starbucks drink is made with their classic espresso, milk and a cinnamon dolce flavored syrup. To top it, there’s a generous layer of sweetened whipped cream and a cinnamon dolce topping, made with cinnamon and sugar.

We’ll do something similar here in our cinnamon dolce latte recipe. I made mine iced but feel free to use hot coffee and omit the ice to enjoy this drink hot.

Cinnamon Dolce Latte Ingredients

Tips for Making a Cinnamon Dolce Latte 

Espresso 

I used Illy Intenso whole coffee beans. I grind the beans with a Hario Skerton hand grinder right before brewing, then brew the beans in a stovetop moka pot.

You can use any of your favorite coffee beans, or why not use a Starbucks Espresso Roast to keep with the Starbucks inspired theme? 

Ideally, espresso is made with an espresso machine. But if you don’t have an espresso machine at home. Don’t worry! You can still make an espresso like coffee, including with my preferred method, the moka pot.

The goal is to create a concentrated coffee, so whichever brewing method you choose, just make sure to make it as concentrated as possible so you can taste it through the milk and other flavors we’re adding to this latte. 

Ground cinnamon

Ground cinnamon does not dissolve in coffee. So to put the flavor of cinnamon in coffee, we’ll be putting a pinch of ground cinnamon into our coffee grounds before brewing. This results in a cinnamon flavored coffee.

We’ll also be using the ground cinnamon to make the cinnamon sugar topping. 

Vanilla syrup 

I use Monin Vanilla Syrup. This is a pure Madagascar vanilla syrup without any artificial colors, flavors or ingredients. 

Use a store bought one or you can also easily make your own vanilla simple syrup. You can store this in the refrigerator and it can last for weeks. 

To make it, simply put equal amounts of water and sugar over the stove top on medium heat. When the sugar dissolves completely, turn off the heat and stir in a few teaspoons of vanilla extract. When it cools, put it in a mason jar or airtight container and store it in the refrigerator. 

Ice cubes

Use ice cubes if you want to make an iced cinnamon dolce latte. If you decide to make an icd version of the drink, consider using coffee ice cubes. 

This is a coffee ‘hack’ so you’ll never have diluted coffee again. When your cubes melt, it melts coffee and not more water. It’s so simple to do – just freeze any extra coffee you have from your morning pot and you can use it for your iced coffees. 

Milk

I used almond milk. You can use any milk – whole milk, skim milk or a milk alternative. 

Whipped cream 

I used store bought Reddi Wip whipped cream. But you can also make your own at home and sweeten it to taste almost like Starbucks’ whipped cream. 

Just mix heavy cream and vanilla syrup on medium high speed with an electric mixer until stiff peaks form. 

Cinnamon sugar 

The Starbucks cinnamon dolce latte is topped with a Cinnamon Dolce Topping. The ingredients are listed as sugar, cinnamon, salt, extractives of butter and other natural flavors. 

To make the topping, I just mixed equal amounts of ground cinnamon and white sugar. You could also make it with brown sugar.  

How to Make Cinnamon Dolce Latte 

  1. Grind coffee beans. Add ground cinnamon to the ground coffee before brewing.
  2. Brew coffee beans. I used a moka pot.
  3. Add vanilla syrup to espresso. Set aside to cool. (If making the iced version.)
  4. Mix ground cinnamon and white sugar to make cinnamon sugar.
  5. Put ice cubes (if making iced version) in a glass. Pour espresso and milk. 
  6. Top with whipped cream and sprinkle cinnamon sugar.

  • ½ cup espresso
  • ⅛ teaspoon ground cinnamon 
  • 1 teaspoon vanilla syrup 
  • 8 ice cubes
  • 1 cup milk
  • Whipped cream 
  • Cinnamon sugar (⅛ teaspoon ground cinnamon + ⅛ teaspoon white sugar)

Instructions

1. Brew espresso with ground cinnamon in coffee grounds. Add vanilla syrup to espresso. Set aside to cool.

2. While espresso cools, mix cinnamon and white sugar to make cinnamon sugar. 

3. Add ice cubes to a glass. Pour in milk and espresso.

4. Top with whipped cream and sprinkle cinnamon sugar on top.
